Makes 18 dumplings

1 lb lamb
1/2 head cabbage
1 large sprig green onion
Worcestershire sauce
1 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1/2 teaspoon cracked black pepper
1/2 teaspoon garlic powder
1 pinch ginger
1 teaspoon red pepper flakes
3 tablespoons peanut oil
18 Chinese dumpling wrappers (
Chinese Jiaozi)
soy sauce, for garnish

Use the
Weston 10 Piece Game Processing Knife Set to cut the lamb into 1 inch pieces, making sure to remove bone, if there is any.
Attach the coarse grinding plate to the
Manual Food Grinder. Place the cumin, coriander, pepper, garlic, and ginger into the cup of the stomper and mix the seasonings thoroughly.
Load a few pieces of lamb into the grinder, then sprinkle some of the seasoning over the lamb, continue this until all of the lamb and seasoning is loaded. Press the stomper tightly against the lamb as you turn the handle of the
food grinder. Once all of the lamb has been ground, cover it and place it in the refrigerator.
Use the
Weston Cabbage Shredder to completely shred the half head of cabbage and set it aside. Chop your green onion in half, separating the green and white parts. Set the green aside (it will be a garnish later), then chop the white part of the onion. Place the onion and cabbage in your sauce pan over medium heat with 2 tablespoons peanut oil and red pepper flakes. Cook until the onions and cabbage are soft and translucent. Set aside, covered.
Cook the lamb in the same saucepan over medium heat with the Worcestershire sauce until browned. Mix together the lamb and cabbage mixture.
Place a dumpling wrapper on the
Roma Ravioli Maker, then place a tablespoon of filling in the middle. Wet the edges of half of the wrapper, then press the
Ravioli Maker tightly together. Repeat for the remaining dumplings.
Once you have your dumplings, steam them in a collapsible steamer for 10 minutes, or until soft. Fry them in one tablespoon of peanut oil until browned. If you get low on oil before they are done, just add a little water to the pan.
Drain and serve with the rest of the green onion, sliced, and soy sauce.
