Wild Apple Maple Breakfast Sausage with a Weston Jerky Gun

- 5 lbs elk, cubed
- .3 lbs pork fat
- 1 apple
- 1 clove garlic, smashed
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1 tablespoon cinnamon
- 1 teaspoon black pepper
- 1/2 teaspoon nutmeg
Directions
Homemade breakfast sausage is easier to make than you think when you have a Weston Jerky Gun. We jazzed it up with the flavors of fresh apples and maple syrup - And, as an added bonus, this breakfast sausage was prepared from fresh elk ground in a Weston Meat Grinder.
- Peel, core and chop the apple.
- Using a Weston Meat Grinder with the coarse grinding plate, grind together your elk and fat. Hand mix the elk mixture with the remaining ingredients (including the apple). Use the grinder with a finer plate to grind the mixture.
- Fill the Weston Jerky Gun tube with the ground meat. Attach the snack stick funnel to your Jerky Gun. Wet the collagen casings, then thread them onto the nozzle. Gently pull the trigger to fill the casing with meat. Twist and tie every six inches.
- When you are ready to eat them, simply prepare them as you would normally prepare breakfast sausage links (The casings will slip off easily after you fry them, so if you prefer breakfast sausage without casing, removal is very easy after cooking).
