Ginger-Honey-Orange-Sesame sauce combined with the right amount of smokiness make for an absolutely delicious chicken wing. We smoked our wings in a Weston Smoker, then tossed them in a mixture of honey, soy sauce, sesame seeds, orange zest and a few other ingredients that you'll find below.
- Ingredients -
1 dozen chicken wings
2/3 cup thick Worcestershire sauce
2/3 cup soy sauce
2 tablespoons sesame seeds
1 tablespoon honey
2 teaspoons black pepper
2 teaspoons onion powder
1 teaspoon red pepper flakes
1/2 teaspoon ginger
orange zest from 1 orange
2 tablespoons fresh orange juice

Weston V-Slice Mandoline Slicer
Weston Vertical Propane Smoker
Wood chips or pellets for your smoker
To prepare the sauce, insert the small grating plate into your Weston V-Slice Mandoline Slicer, and zest your orange into a bowl. Cut into the orange and squeeze two tablespoons of juice into the bowl. Mix in remaining ingredients. Cover and refrigerate.
Preheat your smoker. Soak your wood chips for a half hour if needed. Fill the water bowl of the smoker. Once the smoker reaches 250 degrees F, place your wings onto the smoker racks and the wood chips into the smoking box. Smoke for 2 1/2 hours at 250 degrees.
Remove and toss wings in about 1/2 cup of sauce. Return to smoker for an additional half hour. Remove wings and broil on high for about 5 minutes to crisp. In the meantime, heat your sauce. Once both are done, toss the wings in the sauce and serve.
