1 to 2 pounds venison tenderloin, cut into small chunks
1/2 to 1 pound bacon
1/4 cup brown sugar
1/8 teaspoon black pepper
1/4 teaspoon salt
Optional: A few shakes of red cayenne pepper
Directions
Preheat the oven to 425° Fahrenheit.
Line baking tray with foil and place baking rack on top. This allows the bacon fat to drip and helps it crisp.
Mix brown sugar, black pepper, salt, and cayenne pepper in bowl. Set aside.
Cut your beef into small, bite-sized cubes.
Season the venison cubes with about half of the brown sugar mixture.
Cut each strip of bacon into thirds.
Wrap the bacon around the venison cubes and secure it with a toothpick. Place on a baking tray.
Sprinkle with remaining brown sugar mixture.
Bake the bites in the oven for about 12-15 minutes, until the bacon starts to get crispy and the venison is cooked. If needed, you can switch the oven to broil at the end to crisp up the bacon.
