Sweet & Spicy Smoked Country Ribs

These country-style ribs, smoked in a Weston Smoker, then glazed with an orange-Sriracha garlic jelly make for a smoky, Asian-inspired rib that's perfect for summer barbecues.

- Ingredients -
2 lbs Country Style Ribs (you can use any ribs for this recipe)
1 teaspoon black pepper
1 teaspoon chili powder
1/4 teaspoon sea salt

Glaze
8 oz Balsamic Herb Garlic Jelly (click for recipe)
1 teaspoon Sriracha sauce
1 tablespoon orange zest
1 tablespoon orange juice

Garnish
sesame seeds
scallions

- Tools -
Weston Smoker
apple or cherry wood chips
disposable aluminum roasting pan

Soak your wood chips for 30 minutes and preheat your Weston Smoker to 150 degrees. Place the ribs into the roasting pan and sprinkle with pepper, chili powder, and salt. Fill the pan with water to a quarter inch.

This is what our ribs looked like after about an hour in the smoker.
Place the ribs into the smoker and smoke 4-6 hours, until the internal temperature of the pork is 150 degrees F.

Tip: Be sure to change out your wood chips as needed. Once they are ash, empty the smoke box and replace them with new ones (that have been soaking at least 30 minutes) - otherwise your pork may taste ashy.

This is what our ribs looked like when they were done smoking.
While the ribs are smoking, mix together ingredients for the glaze. Chill until ready to use.

We used our Weston V-Slice Mandoline to zest the orange.

Once the ribs are finished smoking, brush the glaze onto the ribs. Garnish with sesame seeds and scallions.
