Spinach Pasta with the Roma Tube Pasta Machine by Weston

Prep Time 10 min     Cook Time 3-5 min     Serves 6-8

Ingredients
1 1/2 cups Semolina
1 teaspoon salt
2 eggs
1/8 cup white wine
1/4 cup frozen spinach

1 tablespoon olive oil for boiling 
1 teaspoon salt, for boiling 
1 tablespoon olive oil for tossing

Defrost the spinach. Pour all ingredients into the Roma Tube Pasta Machine by Weston with the dough mixing kit attached. Turn the handle until the dough is completely mixed. 


Remove the dough and mixing kit and convert the machine back. Choose your die (pasta shape), then turn the handle to extrude the pasta. Once the pasta has reached the desired length, cut it with the spatula provided.


Cook the pasta in
boiling water with olive oil and salt for 3-5 minutes, stirring constantly with a Roma Bamboo Spoon by Weston. Toss in olive oil immediately to avoid sticking.


Alternatively, you may also dry the pasta to cook later.
