Sous Vide Asparagus with Parmesan Cheese
Ingredients
1 pound (454 g) asparagus, trimmed
1 tablespoon (15 ml) olive oil
1/4 teaspoon (1.3 ml) kosher salt
Grated parmesan cheese
Directions
Preheat sous vide to 145°F.
Place asparagus, olive oil and salt in a vacuum bag and seal according to manufacturer's instructions.
Cook asparagus in the water bath until fully tender, about 1 hour.
Empty entire contents of bag into a 12-inch, heavy-bottomed skillet and cook over high heat, for 2 minutes.
Season to taste with salt and pepper and top with parmesan cheese.
