Recipe - Sous Vide Asparagus with Parmesan Cheese

Ingredients

  • 1 pound (454 g) asparagus, trimmed
  • 1 tablespoon (15 ml) olive oil
  • 1/4 teaspoon (1.3 ml) kosher salt
  • Grated parmesan cheese

Directions

  1. Preheat sous vide to 145°F.
  2. Place asparagus, olive oil and salt in a vacuum bag and seal according to manufacturer's instructions.
  3. Cook asparagus in the water bath until fully tender, about 1 hour. 
  4. Empty entire contents of bag into a 12-inch, heavy-bottomed skillet and cook over high heat, for 2 minutes.
  5. Season to taste with salt and pepper and  top with parmesan cheese.
