Ingredients

  • 1 tablespoon packed brown sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon chili powder
  • 1 teaspoon ground paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon coarse black pepper
  • ¼ teaspoon ground cayenne pepper
  • 1 (4-5 pound) bone-in pork shoulder Boston butt roast
  • Hickory wood chips

Test Kitchen Tip: A 5-pound pork butt will yield about 8 cups of meat. Try adding smoked pork to sandwiches, tacos or Pork Pozole

Directions

  1. In small bowl, combine brown sugar, salt, chili powder, paprika, garlic powder, onion powder, and cayenne pepper. Rub pork all over with seasoning mixture
  2. Assemble Smoker Slow Cooker following manufacturer directions. Add wood chips to charring chamber. Cover charring chamber with lid.
  3. Place pork on rack with handles and lower into Smoker Slow Cooker. Cover with lid.
  4. Set Smoker Slow Cooker to SMOKE on COMBO for 6 hours. Pork is done when it can be shredded easily with a fork. When pork is done, dispose of wood chips properly by soaking with water.
