1 yellow onion, diced

Use the
Weston French Fry Cutter and Vegetable Dicer with the 3/8" cutting plate inserted to perfectly dice your potatoes. Place the potato into the French Fry Cutter, press down on the tab to push the potato through the blades. Use a knife to slice as you go - this will produce perfect cubes.
Mix together paprika, salt and pepper. Over high heat, melt the butter. Once melted, sprinkle the skillet with some of the seasoning mixture. Place a layer of potatoes into the skillet and sprinkle with some of the mixture; then cover with a layer of onions, sprinkle with some of the mixture, and repeat for the remaining ingredients. Reduce heat to medium. Allow to fry for five minutes, then use a spatula to flip. Your top layer should now be browned. Cook for another five minutes, then remove from heat and serve.
