Romantic Dinner for Two: Steak Oscar Sous Vide with a Weston Vacuum Sealer



If the way to your significant other's heart is through their stomach, we have a recipe that will make them yours forever. Cupid may have an arrow but we have, well, a vacuum sealer.


It may sound strange, but preparing the most tender steaks means vacuum sealing them raw and cooking them in their bag in a water bath. The technique is called sous vide and you don't need a sous vide machine to master it. With a good digital thermometer and a Weston Pro Vacuum Sealer, you can perfect an impressive meal with minimal effort.


I've also found that the best way to prepare asparagus is sous vide. So I put my own twist on steak oscar: a hanger steak topped with tarragon-infused asparagus, crab meat, and tarragon pasta with béarnaise-style sauce. And one more great thing about this sous vide meal... if you shop smart, you can do it for under $50. Often, the tougher cuts of steak are the more flavorful(and less expensive) ones, so being able to prepare a flavorful cut like the hanger steak in a way that makes it as tender as a filet is a wonderful thing.

And don't forget... vacuum sealing is not only great for sous vide, it preserves the freshness of foods. You can’t always find exactly 8 pieces of asparagus, 2 tablespoons of fresh tarragon, 2 ounces of crab meat and 2 pounds of steak. You’re often going to have extra product, and that’s when you vacuum seal it and store it in the refrigerator or freezer for later. When I prepared this meal, that was certainly the case, so I vacuum sealed the foods, refrigerated them, and then cooked the rest of them for my fellow Westonians - right in the bags that I preserved them in.
