Rhubarb-Ginger Margarita Recipe

A perfectly sweet & sour margarita with four simple, fresh ingredients makes for the ideal spring cocktail.

Makes two margaritas

- Ingredients -

Rhubarb Compote & Cordial (use the compote in this Rhubarb BBQ Sauce Recipe)
2 lbs rhubarb, cut into one-inch pieces
1 cup sugar
1/4 cup water

Rhubarb-Ginger Margaritas
12 oz rhubarb cordial
4 oz ginger beer
4 oz your favorite tequila
1 oz lime juice

To make the rhubarb cordial, place two cups of rhubarb (chopped into one inch pieces) into a pot with 1 ½ cups sugar and ¼ water. Mix with a wooden spoon to coat the rhubarb with the syrup.


Bring to a boil, then reduce to a simmer. Simmer the rhubarb 30 minutes or until it falls apart. Use a Cone Strainer to separate the compote from the cordial.You can use the compote in this Rhubarb BBQ Sauce Recipe. Remove the bowl of cordial from underneath the cone strainer.


Use a Manual Kitchen Kit to juice your lime - be sure to reserve a slice of lime for your glass before juicing.


Combine the rhubarb syrup, tequila, and lime juice in a mixing glass, then tilt the glass and pour in the ginger beer (it will foam). Use a drink stirrer to gently mix the ingredients. Salt a glass, fill it with ice, and gently transfer your margarita from the mixing glass to your salted glass. Enjoy!
