Red Wine Mushrooms
Ingredients
- 1 lb of your favorite mushrooms (we used portabella)
- 6 oz red wine (for rehydrating)
Directions
Dry fresh mushrooms for preservation and rehydrate with red wine for a flavor boost.
- Clean mushrooms with cloth or mushroom brush to remove dirt if necessary.
- Slice the mushrooms. The thinner you get them, the quicker they'll dehydrate.
- .Arrange the mushroom slices on the trays of the Weston Dehydrator, keeping space between them.
- Dehydrate for 3 hours, or until completely dry.
- At this point, you can store them in mason jars or in a vacuum bag until ready to use in soups or sauces.
- One way to enhance the mushrooms is to rehydrate them in red wine using the following instructions.
- Heat 6 oz of your favorite red wine to boiling, remove from heat, and drop in the mushrooms.
- Allow them to soak for 30 minutes to an hour.
- Use in a pasta dishes, stews, lasagna, or a topping for burgers.
