Recipe - Red Wine Mushrooms with a Weston Dehydrator

  • 1 lb of your favorite mushrooms (we used portabella)
  • 6 oz red wine (for rehydrating)


Dry fresh mushrooms for preservation and rehydrate with red wine for a flavor boost.

  1. Clean mushrooms with cloth or mushroom brush to remove dirt if necessary.
  2. Slice them in half, then use the Weston Mandoline to slice them the rest of the way. The thinner you get them, the quicker they'll dehydrate.
  3. .Arrange the mushroom slices on the trays of the Weston Dehydrator, keeping space between them.
  4. Dehydrate for 3 hours, or until completely dry. 
  5. At this point, you can store them in mason jars or in a vacuum bag until ready to use in soups or sauces.
  6. One way to enhance the mushrooms is to rehydrate them in red wine using the following instructions. 
  7. Heat 6 oz of your favorite red wine to boiling, remove from heat, and drop in the mushrooms.
  8. Allow them to soak for 30 minutes to an hour. 
  9. Use in a pasta dishes, stews, lasagna, or a topping for burgers.
