Quinoa Sliders with a Weston Slider Press

These are veggie burgers for people who don't like veggie burgers. They're light and refreshing, but still hearty and wholesome. The Weston Kitchen Kit does all the work to get the patties together, and then you drop them into a Weston Slider Press and get a nice, crispy-on-the outside, soft-on-the inside grilled slider. Time to get grillin'!

Makes about 15 sliders

- Ingredients - 
1 cup quinoa
1 cup Panko breadcrumbs
2 eggs
half of a cucumber
1/4 cup Pecorino Romano cheese
1/2 small yellow onion, cut into chunks
4 garlic cloves
1/2 red pepper, cut into chunks
1 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper

White BBQ Sauce
1 cup mayo
1 tablespoon apple cider vinegar
1 teaspoon liquid smoke
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder

15 basil leaves
3 small tomatoes, sliced (we use a combo of red and yellow)
30 mini pitas

Bring quinoa and 2 cups of water to a boil, then reduce to a simmer. Simmer, covered, for 10-15 minutes. Spread the quinoa out on a plate to cool.

Insert the whisk attachment into your Weston Manual Kitchen Mixer and whisk together the eggs.


 Insert the chopper attachment. Attach the coarse grater to your mixer and shred half of your cucumber.


Next, attach the fine grater plate to the mixer and grate the Romano cheese into the eggs and cucumber.


Remove the grater, sprinkle in red and black pepper, then drop the onion, red pepper, and garlic into the mixer. Place the lid onto the mixer, then turn the handle to chop and mix. Add in your quinoa and Panko breadcrumbs, then continue to mix until well blended.


Start your grill. Dab a little olive oil over each of the slots of your Weston Slider Press. Form two tablespoons of the quinoa mixture into a ball and place into one of the slots in the slider press. Repeat for the remaining four slots.


Place your Weston Slider Press & Cooker onto your grill and cook on high heat for 3-5 minutes. Repeat two more times.


Prepare the white barbecue sauce by placing all ingredients into the Weston Kitchen Mixer with the whisk attachment inserted, then turn the handle until well blended.


 Serve the sliders on mini pitas with a dollop of white barbecue sauce, a slice of tomato, and a basil leaf.
