Perfectly peppered, pretzel crusted, and flattened to a tee with our Weston Meat Cuber/Tenderizer, this schnitzel doesn't have to stray too far from traditional to taste extraordinary.

4 boneless pork chops
1 cup flour
2 eggs, whisked together
1 cup pretzels
2 tablespoons lemon juice
1 tablespoon rendered duck fat
salt & pepper to taste

Insert the fine grinding plate into your
Weston Manual Food Grinder, then use the Grinder to easily crush your pretzels into a powder.
Feed the pork chops into the
Weston Meat Cuber/Tenderizer long ways. If you'd still like them thinner, turn them and feed them through again.
Salt and pepper the pork chops to your liking. Place the flour, eggs, and pretzels into three separate bowls. Press each pork chop into the flour, then into the egg, and finally into the pretzel, coating completely with each.
Heat your skillet over medium high heat. Once heated, drop the fat into the skillet and coat the entire bottom with it. Place your pork chops into the skillet and allow to cook until browned underneath (about 5 minutes). Flip the pork chops and squeeze 1 tablespoon of lemon juice over your newly browned chops. Continue to cook until the other side is browned, then remove from heat, flip, squeeze the remaining tablespoon of lemon juice over the other side. Serve warm.
