Orange Spice Noodle Recipe

This is not exactly a traditional pasta recipe. Sometimes when you get really into pasta making, you can't help but get a little crazy with the ingredients. The combination of orange, cardamom & cloves in this pasta is reminiscent of an orange spice tea, and is so flavorful that you can toss the noodles in butter or sesame oil and call it a meal. We still included a peanut sauce recipe that compliments the noodles well. Serve these cold or hot.

Serves 2-4

- Ingredients - 

1 cup semolina
1 extra large egg
1 orange
1 teaspoon whole cloves
1 teaspoon cardamom pods

½ cup peanuts
1 clove garlic, smashed and chopped
1 coin ginger, chopped
2 tablespoons lime juice
1 tablespoon peanut oil
1 tablespoon sriracha sauce
1 teaspoon soy sauce

Step One | The Pasta Dough

Use a Weston V-Slice Mandoline with the grater plate to zest your orange until you have three tablespoons of zest.

Grind the cloves and cardamom using a Weston Food Grinder, with the fine plate. Mix the orange zest, ground cloves, and cardamom into the semolina.

Form the dry semolina mixture into a mound and dig a well into its center. Break your egg into the well. Squeeze one tablespoon of orange juice into the well. Use a fork to scramble the eggs, then mash the semolina into the liquid center (don't break the well though). Continue until you have formed a uniform dough, then knead it a few minutes, until it is smooth and elastic. Cover the dough with plastic wrap and allow to rest for 30 minutes.

Step Two | The Sauce

Prepare your peanut sauce by pouring the peanuts into your Weston Food Grinder - with the fine plate inserted - then pour in the remaining ingredients. Turn the handle to puree the ingredients together. Cover and set aside.

Step Three | The Noodles

Once the dough has rested, pull a palm-sized chunk from the dough ball, flatten a bit, then feed it into your Roma Pasta Machine. Continue to feed it until setting 4 or 5.

Feed the sheet of dough into the noodle cutter on the machine. Repeat for remaining dough.

Once you have all of your noodles, boil them for about 3 minutes, until soft and tender.

Step Four | Serve

Place the noodles into a large saucepan with the peanut sauce and sauté for a couple of minutes, tossing to coat the noodles with the sauce. Once the peanut sauce is good and hot, pour the noodles and sauce into bowls and serve immediately.

Alternately, you can serve this dish cold. Prepare the sauce ahead of time and chill. When the noodles are done boiling, toss them in the cold sauce, then serve.
