Lo Mein [with Homemade Noodles] with a Roma by Weston Pasta Machine

If you thought you loved Lo Mein before, try it with fresh homemade noodles. We made our own noodles with our Roma Pasta Machine, sliced veggies with our Weston Mandoline, and tossed it in a skillet with pork and soy sauce for the best Lo Mein you've ever had.

- Ingredients - 

Pasta Dough

1 cup semolina
1 egg
2 tablespoons soy sauce + 1 teaspoon for boiling + 1 tablespoon for tossing

Lo Mein
1 lb pork, sliced into strips
1 tablespoon rendered fat
1/2 cup soy sauce
1 tablespoon peanut oil
1 cube chicken bouillion
2 tablespoons sugar
2 carrots
1/2 white onion
1/2 head cabbage
2 cups snow peas

Garnish
2 sprigs green onions, chopped
2 tablespoons sesame seeds

To prepare your noodles, make a mound of semolina and break your eggs into the center, then pour in 2 tablespoons of soy sauce. Fold the flour into the liquid center until an elastic pasta dough forms. Wrap the dough in plastic wrap and let rest 30 minutes.

While the dough rests, use your Weston Mandoline Slicer to slice your carrots, white onion and cabbage. Cover and chill while you make your noodles.

After 30 minutes, put a pot of water on to boil and pour in a teaspoon of soy sauce, then begin making your noodles.

Pull a palm sized chunk from the dough and flatten with your hands. Feed it into the pasta machine at the thickest setting, folding over a few times, then feeding into the machine until the 4th to last setting (medium thickness). Feed the sheet through the spaghetti cutter on the machine, then hang your noodles on a Roma Pasta Drying Rack.

Heat your skillet over medium-high heat. Melt the fat over the bottom of the skillet, then add in pork.

While the pork cooks, place your noodles into the boiling water. After 3 minutes, drain noodles and toss with a tablespoon of soy sauce.


Once the pork is cooked through, about five minutes, toss the remaining ingredients into the skillet and allow to cook an additional five minutes. Toss in the noodles after the vegetables have begun to brown (but are still crisp). Remove from heat and serve with green onions and sesame seeds sprinkled over top.
