These savory lamb sliders are made with meat and spices that were freshly ground in a Weston Manual Food Grinder, then pressed in a Weston Mini Burger Press. They're topped with a delicious Tzatziki sauce, crafted with homemade Greek yogurt that we made in our Weston Dehydrator - plus feta, mint, tomatoes, onions, and cucumbers. Makes three approximately 1/6 lb slider patties

Lamb Slider Patties
1/2 lb lamb, cubed
1 1/2 oz fatback (.1 lb), cubed
1 teaspoon black peppercorns
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/4 teaspoon fennel seeds
2 cloves garlic, smashed and lightly chopped
Tzatziki Sauce12 oz
Homemade Greek Yogurt (1 1/2 cups)
1/2 English cucumber, grated with a
Weston V-Slice Mandoline
1 garlic clove, chopped in a
Weston Manual Kitchen Mixer
1 teaspoon fresh lime juice
1 teaspoon fresh dill, chopped in a
Weston Manual Kitchen Mixer
1 teaspoon salt
1/2 teaspoon sugar
For serving
3 mini pita pockets
4 grape tomatoes, sliced
2 tablespoons diced white onions
2 tablespoons feta cheese
6 thin slices cucumber
1 tablespoon fresh mint leaves, minced

Toast the cumin, coriander and fennel seeds and peppercorns. Place spices, garlic, cubed lamb, and fat into the
Weston Manual Food Grinder and grind with the coarse grinder plate inserted. Run half of the grind back through with the finer grinder plate inserted. Mix the two grinds together.
Take a third of the mix and form a ball. Place it onto a slot of the
Weston 3-Slot Mini Burger Press. Repeat for two remaining slots, then press down to form patties. Remove the patties from the slots, then grill to your desired temperature or cook on your stove top with olive oil.
Mix together all ingredients for the Tzatziki sauce. Serve lamb sliders, sprinkled with mint, in mini pita pockets with Tzatziki sauce, tomatoes, onions, feta, and cucumbers.
