The good folks over at Kabab-O-Matic stopped by to make us some authentic kababs. Using a Weston Vertical Sausage Stuffer
and their kabab making attachment, they churned out the most delicious
kababs we've ever had. Homemade kababs are typically made by hand, but
the Kabab-O-Matic makes perfect, uniform kababs every time - quickly and
easily.
They attached their Kabab-O-Matic to the Weston Sausage Stuffer,
loaded the stuffer with the meat mixture, inserted a kabab skewer,
cranked the handle, and out came perfectly shaped kababs. They then
skewered some fresh tomatoes and grilled both sets of skewers for 5-10
minutes, turning them frequently. Once browned, the kabab was removed
with a fork and served in a warm pita with the grilled tomatoes and
fresh onions.
The kababs were so delicious, we thought we'd share the recipe with you.
Classic Kabab Recipe
Ingredients
3.5 lb beef
1.5 lb lamb
5 medium onions
1 1/2 tbsp salt
1/2 tsp pepper
1/2 tsp saffron
15 pitas
10 tomatoes, halved
2 large yellow onions, sliced
Grind the beef and lamb with a Weston Meat Grinder.
Meat needs to be ground twice, once through the coarse grinding plate,
and again through the medium grinding plate. Puree onions in
food processor. Drain the onions in a Weston Cone Strainer
- you'll want as little liquid as possible in your mixture. Mix in salt
and pepper, knead meat mixture by hand or use a Weston Meat Mixer if preparing in bulk, and put into Kabab-O-Matic. This video will show you how to use the machine:
