1 lb fresh mushrooms
1 cup white wine vinegar
1 cup olive oil
1/2 cup sugar
1 clove garlic, crushed
1 dried red chile, sliced
1 sprig thyme
2 bay leaves
2 teaspoons dried parsley
2 teaspoons sea salt
2 teaspoons cracked pepper

Put all of the ingredients into a
Weston Vacuum Sealer Canister, then fill with water, leaving about a centimeter of head space. This will help keep the mushrooms submerged in the marinade.
Insert one end of the vacuum hose into the accessory port on the vacuum sealer. Insert the other end of the accessory hose into the port on the lid of the canister. Turn the knob on the canister to the seal position. Press the marinate button twice, then press the start button. This will engage the 20 minute marinate process. The vacuum sealer will begin a process of vacuum and rest over the span of 20 minutes. Once it is finished, it will sound to let you know.
Once it has finished, press the accessory button. This will vacuum and seal it a final time. Now you may place it in your refrigerator to finish marinating over night.
If you're in a hurry, the 20 minute marination will infuse the mushrooms with plenty of flavor, and you can skip the rest. The final marination in the refrigerator just ensures that you get the fullest flavors. When you are ready for the mushrooms, just turn the dial on the canister to open. Reseal the canister and refrigerate if you end up with leftovers.
