Indian Curry with the Weston Food Mill: Butter Chicken Masala

Celebrate the festival of colors and the arrival of spring with our favorite Indian Curry Recipe! Yesterday marked the first day of spring and Saturday saw Holi. Celebrated primarily by the Hindu religion, Holi (or Basant Utsav) is a celebration of nature and color. Just because the festival is technically over doesn’t mean we can’t go on celebrating - and considering it’s Monday, we need something to celebrate!
This homemade Butter Chicken Masala is a spicy, traditional Indian dish. A staple of delicious Indian cuisine, we’ve chosen butter chicken as our favorite springtime recipe. For those who aren’t into pungency, the spice factor can be easily adjusted by using less chili powder.

We start with a how to on making a few hard to find ingredients from scratch - garam masala, tandoori masala, and ginger garlic paste. While such a feat may seem impressive, we have a secret weapon – the Weston Multi-Seed Grinder. We used this versatile kitchen tool as a spice mill to hand grind fresh spices, ensuring that we accomplished the ultimate curry recipe.

Armed with a Weston Pro-2300 Vacuum Sealer to quickly and effectively marinade our chicken, a Roma by Weston Food Strainer & Sauce Maker to prepare the tomato paste, and a Weston Stainless Steel Food Mill to puree and blend the curry, we made a challenging recipe simple and easy.
