Homemade Cold Soba Noodles drenched in a combination of peanut butter, banana, soy sauce, and ginger, then topped with green onions. This huge reward in flavor can be earned with a pasta machine and surprisingly little effort.
Serves 4-6

Soba Noodles
2 cups buckwheat flour
1 cup all purpose flour
1 cup water
Sauce
¼ cup
homemade peanut butter
2 bananas, sliced
1 tablespoon soy
1 teaspoon ground ginger
1 sprig green onions, sliced

Sift the two flours together, place them into a large mixing bowl, and make a mound of the flour. Dig a well into its center and pour in the water. Fold the flour into the water with a wooden spoon until well mixed. Knead the dough until it is uniform and smooth.
Roll the dough into a ball and cover with plastic wrap. Allow to rest 30 minutes.
Bring a pot of water to a boil.
After the dough has rested, pull a palm sized chunk of dough from the ball and run it through a
Pasta Machine until the middle setting. Run the pasta sheet through the
Linguini Cutter. Repeat for remaining dough.
Place the noodles into the boiling water for 3-5 minutes.
While the fresh buckwheat noodles boil, place all of the ingredients for the sauce into your
Manual Kitchen Mixer with the chopper attachment and turn the handle to blend.
Once the noodles are ready, place them into a colander and run under cold water for one minute, or until the noodles are cold. Toss them in the peanut butter banana sauce, then serve, sprinkled with green onions.
