Ham & Cheese Corn Chowder with the Weston 9" Meat Slicer

Prep Time 6-8 hr. stock, 20 min    Cook Time 30 min.   Serves 8-10 

Ingredients
2 gallons ham stock (ham bone, 1/2 lb ham, 2 gallons water)
2 lbs. ham
12 oz. shredded mild cheddar
12 oz. corn
1 red pepper
1 quart heavy cream
10-12 small red potatoes
1 cup scallions
1 red onion

Ham Stock
Place ham bone and about a half pound of ham into a large pot with 2 gallons of water. Bring to a boil, then simmer for 6-8 hours, adding a cup of water an hour, and stirring occasionally. Strain the ham and bone from the stock with the Weston Stainless Steel Cone Strainer.

Chowder
Spray your Weston 9" Meat Slicer blade with Weston Silicone Spray to ensure that the ham doesn't stick to the blade, then slice the ham to 3mm thick. Use a Weston Multi-Chopper to chop the red pepper and red onion and a Weston Stainless Steel Mandoline Vegetable Slicer to slice the scallions and potatoes. Puree half of the corn in a Weston Stainless Steel Food Mill with a coarse milling plate. Combine all of the ingredients except for the cheese in a large pot and bring to a boil, then simmer, stirring occasionally. After 30 minutes, stir in the cheese and remove from heat.
