Basic Pasta Dough
2 cups flour
2 eggs
one cucumber
one tomato
one red onion
1 cup feta cheese
1/2 cup red wine vinegar
1/2 cup olive oil
1 tablespoon basil
1 tablespoon oregano
1 tablespoon parsley flakes
2 teaspoons thyme
1 teaspoon cracked black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
2 cloves fresh garlic
Slice your vegetables with a
Weston Mandoline or
Michael Symon Live to Cook Mandoline, then marinate in vinegar, oil, and seasonings while you make your pasta.
Put on a pot of water to boil.
Mix the pasta dough, then run through a
Roma by Weston Pasta Machine with a Spaghetti Cutter Attachment.
Boil the noodles for about three minutes, then toss with the remaining ingredients. Chill until ready to serve.
