These seriously simple eggplant fries, cut fresh with a Weston French Fry Cutter, are a 'delizioso' Italian dish translated into a fry.

2 eggplants
2 eggs
1/2 cup panko breadcrumbs
1/2 cup finely shredded parmesan cheese
2 tablespoons fresh Italian parsley
1 tablespoon basil
1 tablespoon oregano
1 tablespoon garlic powder
1 teaspoon sage
1/2 teaspoon cayenne
fresh ground sea salt & pepper, to taste

Preheat oven to 525 degrees.
Use your
Weston French Fry Cutter to slice your eggplant. A little trimming beforehand may be required, but do not cut the eggplant any more than needed. Because eggplant is spongy, the force of the french fry cutter pusher will squish the eggplant together if you do not leave enough mass.
Place your sliced eggplants into a large bag with your eggs and shake to coat the slices. Then, pour the remaining ingredients into the bag to coat the eggplant with the breading.
Place your eggplant fries onto a
Weston Baking Mat and bake for 10 minutes or until breadcrumbs are browned and eggplant feels crisp. Sprinkle with salt and pepper, then serve hot with your favorite dipping sauce (pictured with Chipotle Mayo).
