Chipotle Chiltomate Sauce with a Weston Manual Mixer


Chiltomate may be intended to be made with habaneros, but this recipe, substituting Chipotles, will make you a believer in straying from the traditional. Also pictured: Corned Beef Tacos.

Makes about a 1/2 cup

- Ingredients -

8 plum tomatoes, core removed
3 chipotle peppers (canned in adobo sauce)
1 tablespoon adobo sauce
2 tablespoons honey
1 small white onion, chopped
3 garlic cloves, smashed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Weston Manual Kitchen Mixer

Heat the skillet over high heat. Once hot, place all ingredients into the skillet. Cook about 20 minutes, turning occasionally after 10 minutes to keep the ingredients from completely sticking to the skillet. Once the ingredients begin to blacken and you have lost a significant amount of liquid (you will begin with a skillet full of ingredients and go down to about a fistful of the mixture).

Pre-Mixing
Transfer the roasted mixture into your Weston Kitchen Mixer with the chopper attachment inserting. Turn the handle to finely puree the mixture until it is uniform.

Post-mixing


Serve hot or cold.
