Garden fresh cherry tomatoes pureed with a Roma Tomato Strainer and blended with cardamom, can be saved for later with a Weston Canning Kit or served now on crostini with basil leaves.
Makes 12 oz.

1 pint cherry tomatoes, steamed
seeds of 2 cardamom pods
3 tablespoons pectin

Weston Canning Kit
Run the cherry tomatoes through the pumpkin screen of a
Roma Tomato Strainer.
Pour the cherry tomato puree into a small saucepan with cardamom seeds and bring to a boil. Stir in pectin.
Let the jam cool and set. If you'd like to preserve the tomato jam, use a
Weston Canning Kit and water bath to can it.
