Canned Mangoes in a Weston Vacuum Canister

Canned mangoes aren't always the easiest to find at the store. They should be right there with the peaches and the pineapples, but for some reason, never seem to be. The good news is: if you have a Vacuum Canister, you can make your own with fresh mangoes!

Makes 1 1/2 quarts

- Ingredients -
5 ripe mangoes
2 cups distilled water
1/2 cup white sugar

Weston Professional Advantage or Realtree Sportsman's Advantage Vacuum Sealer
Weston Vacuum Sealer Canister


Dissolve the sugar in the distilled water over high heat, stirring occasionally.

While the sugar dissolves, prepare your mango. Slice your mango into two pieces around the flat, oblong pit. To do this, place the mango stem-side-down, then cut from the top along the side of the pit. Score each slice like a checkerboard, but do not cut all the way through the peel. Fan the peel open and pull each mango cube from the peel.

Place the cubes into a Weston Vacuum Sealer Canister, then pour the hot syrup over the mangoes. Place the lid onto the canister, turn the dial to seal, then use your Weston Vacuum Sealer in accessory mode to seal the canister.

Store in a cool, dry place until you're ready to use them.
