Blueberry Chipotle Ketchup with a Weston Tomato Strainer
Ingredients
Makes 2 cups
- 12 oz blueberries
- 1/2 pint of grape tomatoes, halved
- 1 chipotle pepper + 1 tablespoon adobo sauce
- 2 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 8 oz tomato paste
Directions
Fresh picked grape tomatoes, blueberries, and some chipotles in adobo make for one awesome homemade ketchup.
- Use your tomato strainer with the berry screen to puree your blueberries.
- Replace the screen with the pumpkin screen and run the tomatoes through.
- Finely chop the chipotle pepper and mix with the adobo sauce.
- Pour remaining ingredients into a bowl and mix thoroughly.
- Cover and refrigerate ketchup until ready to use.
