Balsamic Herb Garlic Jelly with the Weston Canning Kit

Garlic-y, sweet, and oh-so-savory, we made a delicious garlic jelly that could last us through winter thanks to our Weston Canning Kit - That is, if we could stop breaking into the supply.

Yields (4) 8 oz jars

- Ingredients -
1 whole head garlic
3/4 cup balsamic vinegar
1/4 cup red wine vinegar
2 cups white sugar
1 teaspoon parsley flakes
1 bay leaf, crushed
1 teaspoon dried oregano leaves
3 oz pectin

Weston Manual Mixer
(4) 8 oz jars

Place jars into a large stockpot cover with water, and bring to a boil to sanitize. Reduce to a low boil while you prepare the jelly.

Fill a second canning pot or stockpot will water and bring to a boil (this will be for sealing your jars).

Insert the chopper attachment into your Weston Manual Mixer. Peel and smash your garlic. Drop it into the mixer and turn the handle to finely chop garlic.


Place garlic, vinegar, and herbs into a large saucepan. Bring to a boil, immediately pour pectin in, and bring back to a boil. Remove from heat.

Immediately, remove a jar from the boiling water using your Weston Jar Lifter.



Using a Weston Canning Funnel, fill the jar with the liquid, leaving a 1/4" head space.


Use the Weston Magnetic Lid Lifter to safely remove a lid from the water, and place over the jar.


Use the tongs or lid lifter to remove a ring. Next, use the wrench to secure the ring onto the jar.


Repeat for remaining jars. Remove the sanitizing pot from heat.

Use the Weston Jar Lifter to place the filled jars into the second pot of water. Allow to boil for five minutes. Your lids should be sealed tightly, with the center pressed tightly down (not popped up). Tighten the rings with the wrench. You may also use a pressure cooker for the sealing step.

Store in a cool, dry place for up to three years, unopened. Once opened, store in the refrigerator for up to one month.

When ready to serve, try spreading it over pita crackers with cream cheese. It's also a great ingredient for Insalata Caprese and Bruschetta. Additionally, this jelly makes for a great glaze on ribs, chicken, and other meats.
